Egg, Tomato & Cheese Skillet Quesadilla (serves 2)
Ingredients
- 2 medium tomatoes, sliced into thick rounds
- 1 cup shredded mozzarella (or a cheddar blend)
- 4 eggs, beaten with a pinch of salt and pepper
- 2 large flour tortillas
- 1 tbsp butter or oil
- Optional: dried oregano or chili flakes
Instructions
- Heat the butter or oil in a nonstick skillet over medium heat.
- Arrange the tomato slices in a single layer in the pan.
- Sprinkle a little cheese over each tomato slice.
- Pour the beaten eggs over and around the tomatoes, filling the gaps.
- Place the first tortilla on top while the eggs are still slightly wet, and press down gently.
- Cover the tortilla with another layer of cheese, then add the second tortilla and press again.
- Cook 2 to 3 minutes until the bottom is set and golden.
- Slide a spatula underneath and flip the whole thing carefully. Cook another 2 to 3 minutes until both sides are golden and the cheese is melted.
- Transfer to a cutting board, rest for 1 minute, and cut into wedges.
Tip: Pat the tomato slices dry with a paper towel so the quesadilla stays crisp instead of turning soggy.
